“This woman has gone mad,… so long without posting recipes and now she has thought of putting all the ingredients in the same recipe.”
Firstly I also thought it would be too much for a single bread, but I decided not to take away or put anything. Finally I made the recipe as I found it, and the truth is that the result is more than good , amazingly good I found the recipe in the blog of Loreto, Sabores de colores.
“But… is this a bread? …” Not really, you don´t have to use yeast or let the dough rise … or any of the other things that you need to do for preparing bread. Anyway, it isn´t an common cake, the mass is more dense and the, the next day (if you still have any) is less fluffy, more consistent …
Ingredients:
250 g flour
1 teaspoon baking powder
1/2 teaspoon baking soda
Pinch of salt
100 g cold butter
50 g chopped nuts (I went too far and at the end I put 80 g … to taste)
60 g of black chocolate, chopped
2 eggs
1 tablespoon orange juice
1 teaspoon vanilla extract (or vanilla pod if you don´t have extract)
275 g of bananas (about 3 large bananas)
60 g of diced candied orange. If you don´t like the candied orange you can made the bread without it, but I recommend to use it. Personally, I don´t like candied fruit but in this recipe it gives a wonderful flavor to the bread … you have to try it!
Method:
1. Preheat oven to 180 º C
2. Mix in a bowl flour, baking soda, baking powder, salt, and sift the mixture.
3. Add sugar to the previous mixture and add also butter cut into cubes. Mix with your fingers, until dough is smooth and sandy (I had never done it this way but it’s a fun way, I love to work with hands ) Finally add nuts and chocolate (to chop the chocolate is a good idea to put it before in the fridge for a while, so, it doesn´t melt as quickly and it´s easier to chop)
4. In another bowl beat eggs and add orange juice and vanilla essence.
5. Mash bananas with a fork and incorporate them the mixture of point 4, add also candied orange and mix well.
- Candied orange is very easy to do and it´s better than purchased … We only need the skin of an orange, sugar and water. Withdraw the maximum amount of white part of orange skin, cut into cubes and put it in a saucepan with about 50 ml of water and 50 g of sugar (if the pot is very large and the water doesn´t cover the skin orange, add more water and more sugar, preserving the ratio). Let simmer until skin is tender.
6. Add this mixture to the one of the point 3 and mix until all ingredients are uniformly distributed.
7. To bake you can use a loaf mold (as I did) or small individual muffin molds. In the first case you will need 40-45 minutes, in the second case it will be enough with 20-25 minutes. In any case, as always, it will be done when a small stick inserted in center comes out clean. Be careful, The chocolate will stain the stick even if the cake is done, because the chocolate will always be melted.
It seems we must wait until bread is cool to sink ones teeth into it … honestly, it smells so good when you take it out of the oven that I doubt you can wait
